Cheval Blanc Courchevel seeks an experienced Chef de Partie for its Michelin-starred restaurant. Full-time, on-site role with accommodation and meals included.

Role & Responsibilities

  • Lead and manage a designated kitchen section with autonomy and precision, ensuring adherence to technical specifications and consistent quality throughout service
  • Prepare and plate dishes that showcase seasonal ingredients while respecting the culinary identity and standards of Cheval Blanc
  • Oversee mise en place, cooking techniques, and plating with rigor and attention to detail at each service
  • Mentor and supervise commis staff, ensuring compliance with protocols and maintaining section cohesion and efficiency
  • Collaborate creatively with the Executive Chef on menu development and seasonal offerings
  • Maintain strict compliance with HACCP protocols and food safety standards
  • Manage inventory and monitor food cost controls within the section

Qualifications

  • 3–5 years confirmed experience in Michelin-starred or fine dining kitchens
  • Minimum 2 years in a Chef de Partie position
  • CAP (Certificat d'Aptitude Professionnelle) to Bac+2 culinary training
  • Expert mastery of mise en place, cooking, and plating techniques
  • Demonstrated ability to manage a station autonomously
  • Strong staff supervision and training capabilities
  • Rigorous knowledge of HACCP food safety standards
  • Proficiency with fresh product handling and diverse culinary techniques
