Cheval Blanc St‑Barth (Saint Barthélemy) seeks a Restaurant Captain — full‑time CDD in a luxury beachfront hotel restaurant.

Role & Responsibilities

  • Lead and manage a designated dining station, coordinating the flow of service to ensure flawless guest experiences.
  • Welcome and seat guests with warmth and discretion; provide personalised recommendations on menu and wine pairings.
  • Supervise, motivate and sequence the actions of junior front‑of‑house team members to deliver precise, timely service.
  • Maintain exacting standards of mise en place, table presentation and service techniques throughout each shift.
  • Anticipate and resolve guest requests or issues with tact, escalating complex matters to management when necessary.
  • Ensure compliance with hygiene and safety protocols, including HACCP procedures, and support internal quality controls.

Qualifications

  • BEP / CAP / Bac Pro in Restaurant, Hospitality or equivalent vocational qualification.
  • Working knowledge of luxury hotel or Michelin‑level restaurant service standards.
  • Fluent spoken and written French and English.
  • HACCP certification and strict understanding of hygiene standards.
  • Excellent interpersonal skills, strong attention to detail, and proven ability to work collaboratively in a team.
