Cheval Blanc Paris seeks a Pastry Intern to support Chef Maxime Frédéric's pastry team in creating exceptional desserts across multiple Michelin-starred venues.

Role & Responsibilities

  • Assist the Chef Pâtissier and pastry brigade in creating pastries, desserts, and entremets according to established recipes and techniques
  • Perform preparatory tasks including weighing, sorting, and washing ingredients, and setting up workstations
  • Ensure meticulous presentation of sweet creations according to plating standards and house specifications
  • Maintain kitchen cleanliness and equipment upkeep in compliance with HACCP procedures and Maison protocols
  • Contribute to exceptional guest experiences through attention to detail and technical excellence in pastry production
  • Develop professional skills within a distinguished pastry kitchen environment while demonstrating curiosity, rigor, and commitment to continuous improvement

Qualifications

  • CAP, BEP, or BP qualification in cuisine or pastry
  • MC (Mention Complémentaire) in pastry-bakery, pastry-ice cream-chocolate confectionery, or equivalent specialized pastry certification
  • Technical knowledge of pastry fundamentals and classic techniques
  • Experience in a luxury hotel or equivalent prestigious culinary establishment
  • Strong knowledge of culinary techniques, recipes, and ingredients

Experience
