Cheval Blanc Paris seeks Pastry Intern under Executive Chef Maxime Frédéric. Luxury pâtisserie internship in Paris, France.

Role & Responsibilities

  • Assist Executive Pastry Chef and brigade in preparation and creation of fine pastries, desserts, and entremet compositions
  • Execute preliminary tasks including ingredient weighing, sorting, washing, and product preparation
  • Set up and maintain pastry station workplaces according to established protocols
  • Prepare pastries, desserts, and entremets following precise instructions and applying learned techniques
  • Ensure meticulous presentation and plating of creations in accordance with house standards
  • Maintain cleanliness of kitchen facilities and equipment in compliance with HACCP procedures and Cheval Blanc protocols
  • Demonstrate attention to detail and contribute to service excellence across all kitchen operations

Qualifications

  • CAP, BEP, or BP in Culinary Arts or Pastry
  • MC (Mention Complémentaire) in Pastry and Bakery, or Pastry, Confectionery and Chocolate Specialization
  • Prior experience in a comparable fine-dining or luxury hospitality kitchen preferred
  • Strong technical foundation in pastry techniques and classical recipes
  • Thorough knowledge of professional culinary products and ingredient applications

Experience
