Cheval Blanc Paris seeks a Pastry Commis for Café Maxime Frédéric x Louis Vuitton in Paris. Entry-level role in luxury pastry kitchen.

Role & Responsibilities

  • Execute preliminary preparation tasks and basic pastry techniques under the direction of Demi-Chefs and Chefs de Partie
  • Assist in the confection and elaboration of pastries, desserts, and dessert plating for service
  • Participate in mise en place and service execution in accordance with hotel procedures and culinary standards
  • Maintain kitchen facilities and equipment to rigorous HACCP and food safety standards
  • Receive and process incoming merchandise according to established protocols
  • Sort and dispose of waste in compliance with environmental and hygiene regulations
  • Report any unusual situations or potential safety risks to supervisory staff
  • Contribute to the overall efficiency and quality standards of the pastry kitchen

Qualifications

  • BEP or CAP qualification in Pastry
  • Baccalauréat Professionnel in Culinary Arts or equivalent credential
  • Mention Complémentaire in Restaurant Desserts
  • Demonstrated knowledge of food hygiene and safety protocols, including HACCP procedures
  • Prior experience or significant internships in pastry, preferably in luxury hospitality or Michelin-starred restaurants
  • Proficiency in basic pastry techniques and ability to work in structured, demanding environments
