Cheval Blanc Paris seeks a Pastry Commis for luxury hospitality. Paris-based, full-time role in fine dining pastry production with competitive benefits.

Role & Responsibilities

  • Perform preliminary preparation tasks for pastry products and ingredients
  • Assist Demi-Chefs de Partie and Chefs de Partie in the confection and elaboration of pastries and fine desserts
  • Learn and apply professional pastry techniques and recipes according to hotel standards
  • Ensure service delivery according to hotel rules and procedures, maintaining impeccable guest experience
  • Manage mise en place and plating of desserts, ensuring meticulous presentation
  • Maintain compliance with HACCP standards and house protocols at all times
  • Oversee cleanliness and maintenance of kitchen areas and equipment
  • Participate in goods receipt procedures, following established protocols

Qualifications

  • BEP or CAP Pastry qualification, or equivalent professional pastry training
  • Baccalauréat Professional in Cuisine or Mention Complémentaire Desserts de Restaurant
  • Demonstrated knowledge of HACCP food safety protocols
  • Experience in luxury hospitality or Michelin-starred restaurant environments
  • Minimum three years of significant service experience in a comparable establishment
