Cheval Blanc (LVMH) in Paris seeks a Pastry Commis (full‑time) to support pastry production, service and HACCP‑compliant operations.

Role & Responsibilities

  • Prepare mise en place and perform preliminary production tasks to support pastry creations and dessert service.
  • Assist Demi‑Chefs de Partie and Chefs de Partie in the confection, finishing and assembly of pâtisseries and plated desserts.
  • Execute service and distribution of pastry items according to hotel procedures, ensuring impeccable presentation and timing.
  • Maintain strict compliance with HACCP and internal hygiene and safety standards; ensure cleanliness of workstations and equipment.
  • Participate in receiving and inspection of deliveries, labelling and stock rotation following established protocols.
  • Support routine maintenance of pastry equipment and contribute to inventory management and waste control.
  • Work flexible shifts to meet service requirements and collaborate proactively within a brigade environment.

Qualifications

  • BEP/CAP Pâtisserie or BAC PRO Cuisine / MC Desserts de Restaurant (or equivalent vocational qualification).
  • Solid knowledge of HACCP principles and food‑safety procedures.
  • Proven experience in a luxury hotel or Michelin‑starred restaurant environment.
  • Minimum three years' professional experience in pastry orservice roles at comparable standard.
  • Professional demeanour with strong organisational skills, precision and meticulous attention to detail.
