Cheval Blanc Courchevel seeks a Pastry Commis Intern at its five-star palace in the French Alps, offering hands-on training in Michelin-starred pastry production.

Role & Responsibilities

  • Assist the Executive Pastry Chef and pastry brigade in the preparation and execution of fine pastry creations, desserts, and entremet
  • Perform mise en place activities including weighing, sorting, and preparing ingredients; washing and processing products; and organizing workstations
  • Execute pastry techniques for desserts and petit fours according to established recipes and Chef specifications
  • Ensure meticulous presentation and plating of all pastry creations in accordance with established plating guidelines
  • Maintain scrupulous cleanliness of workstations, equipment, and the pastry kitchen in compliance with HACCP protocols and house standards
  • Support daily service operations with attention to quality control and timing

Qualifications

  • BEP, CAP, or BAC PRO qualification in Culinary Arts or Pastry
  • Fluency in English and French (written and verbal)
  • Mastery of HACCP food safety standards
  • Proficiency in core pastry techniques
  • Demonstrated passion for gastronomy
  • Strong attention to detail and precision
  • Flexibility and adaptability in a fast-paced environment
