Role & Responsibilities
- Assist the Executive Pastry Chef and pastry brigade in preparing and executing artisanal pastry creations, desserts, and entremet compositions
- Perform preliminary tasks including precise ingredient weighing, sorting, washing, and preparation of raw materials
- Set up and maintain work stations with proper organization and cleanliness
- Execute pastry techniques under close supervision, following detailed recipes and established procedures
- Ensure meticulous presentation and plating of all creations according to established mise-en-place standards
- Maintain full compliance with HACCP food safety protocols and house procedures at all times
- Maintain scrupulous cleanliness and hygiene standards in kitchen areas and equipment
Qualifications
- Culinary qualification at CAP level to Bac+2
- Minimum 3 years professional experience in pastry, with at least 2 years as a Commis
- Demonstrated experience in starred restaurants and/or luxury hospitality environments
- Fluent in French and English (written and spoken)
- Comprehensive knowledge of HACCP food safety standards
- Proficiency in core pastry techniques and fresh product handling

Experience
Minimum 3 years of professional experience in pastry, with a demonstrated track record in Michelin-starred or luxury hospitality settings. At least 2 years of experience specifically as a Pastry Commis. Proficiency in working with fresh products and diverse culinary techniques required.
Education
Culinary formation at CAP level or equivalent vocational qualification, through to Bac+2 (advanced certificate). Formal training in pastry techniques and food preparation is essential.
