Role & Responsibilities

  • Perform preparatory tasks for chocolate and confectionery production, serving as the foundation for all chocolate creations
  • Assist Demi-Chefs de Partie and Chefs de Partie in confecting and elaborating chocolates and petit fours
  • Execute adjustments and refinements for chocolate coating applications and various chocolate types
  • Participate actively in daily production to ensure attainment of established objectives
  • Maintain strict compliance with HACCP standards and the Maison's operational procedures
  • Ensure cleanliness and proper maintenance of production facilities and equipment
  • Receive and process incoming goods while adhering to established protocols

Qualifications

  • CAP Pâtissier (Professional Pastry Diploma) and/or CAP Chocolatier (Professional Chocolate Diploma) and/or BTM Chocolatier (Advanced Chocolate Technician)
  • Demonstrated knowledge of HACCP food safety protocols
  • Proven experience in luxury hospitality or Michelin-starred fine dining establishments
  • Significant experience in a service role within an establishment of comparable standing
