Cheval Blanc (LVMH) Paris seeks a Pastry Apprentice at Café Louis Vuitton — apprenticeship in pastry production and mise en place.
Role & Responsibilities
- Perform preparatory tasks for pastry and dessert production, including basic doughs, creams and component mise en place.
- Support Demi‑Chefs de Partie and Chefs de Partie in the preparation, assembly and finishing of pastries and desserts according to recipes and standards.
- Participate in daily service, ensuring consistent quality, plating and presentation aligned with the Maison’s requirements.
- Follow and maintain hygiene, food safety and sanitation standards in accordance with hotel procedures.
- Contribute to mise en place and inventory control; ensure workstations are tidy and equipment is correctly maintained.
- Represent the Maison professionally; adopt house standards for appearance and guest interaction while learning under supervision.
Qualifications
- CAP, BEP or BP in Pâtisserie (or equivalent vocational pastry qualification).
- Prior experience in an equivalent establishment is advantageous.
- Demonstrable knowledge of basic pastry techniques, recipes and product handling.
- Strong work ethic, discipline, adaptability and autonomy.
- Eagerness to learn, ability to follow instruction and work collaboratively within a brigade.

Open to beginners enrolled in an apprenticeship program; prior experience in a similar upscale establishment is valued but not strictly required.
Education
CAP, BEP or BP in Pâtisserie (or equivalent vocational pastry diploma).
