Cheval Blanc Paris is hiring a Maitre d'Hôtel (Head Waiter) in Paris for Le Tout Paris restaurant — permanent full-time role leading front-of-house service.

Role & Responsibilities

  • Welcome and personally receive guests in strict adherence to the Maison’s codes of excellence, ensuring an unforgettable guest experience from arrival to departure.
  • Lead and supervise the restaurant service team (Chefs de Rang, Commis), setting service standards, coaching, and maintaining performance throughout each service.
  • Drive front-of-house operations for Le Tout Paris, including service sequencing, quality control, mise en place, and coordination with the kitchen and events teams.
  • Recruit, train and develop team members; conduct evaluations and foster a culture of professional growth and exemplary conduct.
  • Maintain deep product and menu knowledge and ensure the team communicates offerings accurately and persuasively to guests.
  • Monitor commercial performance and operational metrics (revenue, ratios, stock levels) and contribute to loss control and inventory management.
  • Ensure compliance with hygiene and safety standards (HACCP) and uphold the Maison’s presentation, uniform and grooming standards.

Qualifications

  • Higher education in Hospitality / Food & Beverage (BTS or equivalent).
  • Minimum 5 years’ experience in a luxury hotel or Michelin-starred restaurant in a similar supervisory or maître d'hôtel role.
  • Proven management experience: recruiting, training, organising rotas, evaluating performance and developing teams.
  • Thorough understanding of hygiene standards (HACCP) and upscale service protocols.
  • Fluency in English (written and spoken) is mandatory; a third language (Arabic, Russian, Chinese, Portuguese) is highly valued.
