Cheval Blanc Paris, an urban Palace and flagship of the Cheval Blanc collection, seeks a Kitchen Commis to join the culinary brigade at Café Maxime Frédéric x Louis Vuitton. Reporting to the Kitchen leadership, the Commis will execute foundational preparation tasks and assist departmental chefs in the execution and elaboration of dishes, while maintaining the Maison's rigorous standards of excellence, hygiene, and operational safety.
Role & Responsibilities
- Execute preliminary preparation and mise en place of products and ingredients according to production procedures and quality standards
- Assist Demi-Chefs de Partie and Chefs de Partie in the preparation, cooking, and plating of dishes
- Participate in the plating and service of dishes, ensuring adherence to hotel procedures and service protocols
- Maintain strict compliance with HACCP protocols and food safety standards throughout all kitchen operations
- Perform housekeeping and equipment maintenance within the kitchen environment
- Receive and verify incoming merchandise according to established procedures
- Sort and dispose of waste in accordance with environmental and safety protocols
- Report any unusual situations, potential hazards, or accident risks involving clients or colleagues to management
Qualifications
- BEP or CAP in Culinary Arts, or equivalent vocational qualification in cuisine
- Demonstrated knowledge of food hygiene and safety regulations, including HACCP protocols
- Prior experience in luxury hospitality or fine dining establishments
- First experience as a Kitchen Commis or significant culinary internships, ideally in a luxury hotel or Michelin-starred restaurant
- Strong understanding of fundamental culinary techniques and procedures
Skills
Experience
Minimum 3 years of experience as a Kitchen Commis or equivalent culinary training and internships in high-end hospitality or starred restaurants.
Education
BEP or CAP in Culinary Arts, or Bac Pro (Professional Baccalaureate) in Cuisine.
