Role & Responsibilities
- Support the Head Chef and Sous-Chef in designing, testing and executing seasonal menus, à la carte dishes and set menus for Le Tout Paris.
- Supervise day-to-day kitchen operations to ensure every dish meets House quality, presentation and portion standards.
- Ensure strict compliance with HACCP protocols and house hygiene and safety standards; maintain cleanliness of premises and equipment.
- Train, mentor and coordinate kitchen brigade to guarantee consistent technical execution and service readiness.
- Contribute creative proposals for new dishes and menus while respecting budgetary constraints and the Maison’s culinary identity.
- Manage stock control and requisitioning in collaboration with the Economat to secure product availability and minimise waste.
Qualifications
- BEP/CAP Cuisine or BAC PRO Cuisine
- Proven knowledge of HACCP rules and kitchen hygiene standards
- Solid experience in luxury hospitality or high-end dining environments
- Demonstrated supervisory and team‑management capabilities (recruiting, training, evaluating)
- Proficiency with Pack Office for basic operational and reporting tasks

Experience
Minimum 3 years in professional kitchens, preferably with prior experience as a 1st Sous-Chef or Chef de Point de Vente within an establishment of comparable standing.
Education
BEP/CAP Cuisine or BAC PRO Cuisine
