Cheval Blanc in Porto Cervo seeks a Junior Sommelier (Temporary, on-site) to join the F&B team, specialising in guest service and cellar management.
Role & Responsibilities
- Deliver impeccable beverage and dining service that reflects luxury hospitality standards and enhances the guest experience.
- Assist the Head Sommelier / F&B Manager in all aspects of the sommellerie operation, including front-of-house service and cellar duties.
- Guide guests through wine and beverage selections with informed, tailored recommendations and professional tasting notes.
- Maintain and update wine and beverage lists; ensure accurate sales and cellar records are kept at all times.
- Manage daily cellar conditions: proper storage, stock rotation for ageing, and temperature control of beverage inventories.
- Ensure all beverages are prepared and served following established luxury service procedures and HACCP (or equivalent) food-safety protocols.
- Support and coach service colleagues on beverage knowledge and service technique to sustain consistent standards.
Qualifications
- WSET certification (Wine & Spirit Education Trust) or equivalent diploma from a recognised sommelier school.
- Minimum five years' relevant experience in luxury hotel F&B or high-end restaurant sommellerie, preferably with international exposure.
- Fluent spoken and written Italian and English; competency in a third language (e.g., French) is an advantage.
- Professional, guest-oriented demeanour with excellent interpersonal and communication skills.
- Demonstrable ability to organise and direct team activities efficiently and maintain high operational standards.

Experience
Minimum 5 years of relevant sommellerie experience within luxury hotels or high-end restaurants, with preference for candidates who have worked in international or multi-lingual environments.
Education
WSET certification or equivalent sommelier diploma.
