Role & Responsibilities
- Lead and mentor the pastry brigade, fostering a stimulating and productive work environment
- Orchestrate all pastry production from conceptualization through final presentation, ensuring alignment with luxury hospitality standards
- Develop and refine pastry recipes and technical specifications, driving innovation across seasonal menus
- Maintain rigorous HACCP hygiene and food safety compliance throughout the pastry laboratory
- Optimize resource allocation and production efficiency without compromising quality standards
- Collaborate with executive culinary leadership to design signature desserts and tasting menu components
- Train and develop pastry team members, upholding the Maison's standards of excellence
Qualifications
- Minimum 3 years of executive pastry leadership in luxury hospitality or Michelin-starred establishments
- BEP, CAP, or BAC PRO qualification in Culinary Arts or equivalent professional pastry certification
- Demonstrated mastery of HACCP protocols and contemporary food safety standards
- Expertise in advanced pastry techniques and classical French methods
- Proven track record of menu innovation and recipe development in haute cuisine environments
