Role & Responsibilities
- Develop, create, and oversee all menus and culinary offerings across multiple restaurant venues, including the Michelin three-star restaurant Le 1947, contemporary brasserie Le Grill Alpin, bar service, and in-room dining
- Ensure exceptional culinary quality, presentation standards, and adherence to all food safety and legal hygiene regulations across all kitchen operations
- Supervise the creation and consistent execution of detailed technical specifications for all menu components and plated dishes
- Lead, train, and develop culinary teams while maintaining high performance standards in a fast-paced, demanding luxury environment
- Manage all kitchen costs including food, materials, and labour while maintaining profitability and cost efficiency targets
- Oversee inventory management and supplier relationships in collaboration with procurement and finance departments, including vendor selection and pricing negotiations
- Maintain and enforce quality assurance standards and consistency with the Yannick Alléno culinary signature across all consulting engagements
- Collaborate with pastry and beverage teams to develop balanced, innovative menus that enhance guest satisfaction and loyalty
- Develop operational budgets and forecasts for the kitchen department
- Work with management on product and service development initiatives to strengthen the establishment's market position
Qualifications
- Professional culinary training (CAP, BEP, Bac Pro, or BTS in Hospitality-Catering or equivalent)
- Significant experience in gastronomic or Michelin-starred cuisine
- Proven experience managing culinary teams in luxury or palace hotel environments
- Demonstrated expertise in kitchen cost management, food costing, stock control, and procurement
- Strong organizational skills, attention to detail, and ability to maintain excellence under pressure
- Experience opening new establishments or managing seasonal alpine hospitality operations highly valued

Minimum 5–10 years of professional kitchen experience, including several years as a Head Chef or Executive Chef in fine dining or luxury hospitality establishments
Education
Professional culinary qualification (CAP, BEP, Bac Pro, or BTS in Hospitality-Catering or equivalent international qualification)
