Role & Responsibilities
- Design, develop and oversee all menus, dishes and culinary concepts for every food outlet of the hotel.
- Ensure culinary excellence in taste, presentation and consistency across services and outlets.
- Create, validate and enforce precise technical recipe sheets and ensure their correct application by kitchen teams.
- Manage daily kitchen operations, including organisation of production, staffing, rotas and service flow.
- Control and optimise all food‑related costs (food cost), budgets and profitability for the culinary department.
- Manage stock levels, inventory procedures and ordering in collaboration with Economat and Purchasing services.
- Participate in supplier selection, maintain supplier relationships and support commercial negotiations with Purchasing and Finance.
- Recruit, train and develop kitchen personnel; instil standards, procedures and a performance culture.
- Ensure compliance with hygiene, safety and legal standards (HACCP, local regulations) within the department.
- Protect and supervise the culinary signature of the group, coordinating with consulting Chef Yannick Alléno and pastry teams.
- Contribute to pre‑opening activities and seasonal ramp‑ups when required.
Qualifications
- Professional culinary qualification (CAP / BEP / Bac Pro / BTS Hôtellerie‑Restauration or equivalent).
- Minimum 5 to 10 years of progressive culinary experience, including several years as Chef de Cuisine or Executive Chef.
- Proven background in high‑end gastronomic or Michelin‑starred kitchens; palace-level hospitality experience preferred.
- Demonstrated experience in team management, staff development and high‑pressure service operations.
- Strong competency in food cost control, budgeting and inventory management.
- Experience with restaurant openings and/or intense winter seasonal operations is highly regarded.
- French: fluent. English: professional level appreciated.
