Role & Responsibilities
- Assist the Chef de Partie in managing and organising a designated kitchen station (entrée, pasta, fish, meat, vegetables, etc.).
- Prepare and cook assigned dishes in strict accordance with recipes, presentation standards and the Executive Chef's directives.
- Execute mise en place to high standards, ensuring correct preparation and storage of ingredients prior to service.
- Maintain cleanliness, order and hygiene at the workstation and across the kitchen in full compliance with HACCP regulations.
- Monitor stock levels for the assigned station and promptly report re-ordering needs.
- Work collaboratively with the brigade to ensure an efficient, harmonised service flow.
- Contribute to the development of new recipes and uphold the property's culinary standards.
Qualifications
- Minimum three years’ professional experience as a Commis Chef or Demi Chef de Partie in luxury hotels or high‑end restaurants.
- Solid command of classical and contemporary cooking techniques and cooking methods.
- Proven experience assisting with the management of a specific kitchen station.
- Thorough knowledge of HACCP and workplace safety procedures.
- Ability to perform under pressure, organise work efficiently and meet tight service deadlines.
- Flexible availability for shift work, including evenings, weekends and public holidays.
- Fluency in Italian; working knowledge of English is an advantage.
