Cheval Blanc St-Barth seeks a passionate Demi Chef de Partie to join its prestigious culinary brigade and contribute to gastronomic excellence across the property's fine dining venues. The role involves supporting the Chef de Partie in managing a designated station—whether hot, cold, or pastry—with meticulous mise en place, expert preparation, and rigorous adherence to quality standards and culinary techniques.
Role & Responsibilities
- Support the Chef de Partie in the daily management and operations of an assigned kitchen station (hot, cold, or pastry)
- Execute mise en place with precision, ensuring all ingredients, tools, and stations are prepared to exacting standards
- Prepare and cook dishes according to established recipes and culinary techniques, maintaining consistency and presentation excellence
- Manage product preparation, ingredient handling, and stock management while maintaining rigorous HACCP hygiene protocols
- Contribute to the orchestration of each culinary experience, ensuring flawless execution and timely plate distribution
- Assist in the development and refinement of dishes, bringing attention to flavor, texture, and visual presentation
- Maintain the highest standards of kitchen cleanliness, organization, and food safety at all times
Qualifications
- BEP, CAP, or BAC PRO in Culinary Arts
- Demonstrated knowledge of luxury hospitality or Michelin-starred restaurant operations
- Proven experience through two to three positions or internships in comparable culinary establishments
- Mastery of HACCP food safety standards and protocols
- Strong command of classical and contemporary culinary techniques
Skills
Experience
Two to three prior experiences (internships or positions) in luxury hospitality or fine dining establishments; beginner-level candidacy welcomed for those with relevant culinary education and demonstrated passion.
Education
BEP, CAP, or BAC PRO in Culinary Arts required.
