Cheval Blanc Hotel Pitrizza in Porto Cervo seeks a Commis Pastry (temporary, on‑site) to support pastry production and uphold HACCP standards.
Role & Responsibilities
- Support the Pastry Chef and Sous Pastry Chef in the preparation of all pastry products from mise en place through final finishing.
- Execute recipes and production instructions with precision to ensure consistency in taste, texture and presentation.
- Prepare doughs, creams, glazes and other foundational pastry components to specification.
- Assist in the assembly, finishing and decorative work of cakes, plated desserts and petit four.
- Maintain a clean, organised workstation and ensure full compliance with HACCP and food‑safety regulations.
- Ensure correct storage and preservation of raw materials and finished products to preserve quality.
- Collaborate with the kitchen brigade to support seamless service during meal periods and events.
- Monitor inventory levels and report requirements for ingredient and material replenishment.
Qualifications
- Diploma from a hospitality school or an accredited professional qualification in pastry or bakery.
- Previous hands‑on experience as a commis or apprentice in pastry, even if limited; experience in luxury hospitality preferred.
- Practical knowledge of basic pastry techniques and strict adherence to HACCP standards.
- Demonstrable attention to detail, creativity and a genuine passion for pastry craft.
- Ability to work effectively within a team and to perform under the pace of a high‑calibre kitchen.
- Flexibility to work rotating shifts, weekends and public holidays.
- Good interpersonal and communication skills; proficiency in Italian (required).
- Minimum age: 18.
