Role & Responsibilities

  • Assist the Chef de Rang in delivering a refined, personalised dining experience from guest reception through to departure.
  • Prepare and organise the dining areas and service stations according to the Maison’s mise en place standards and HACCP hygiene procedures.
  • Support the flow of service by delivering and presenting dishes and beverages with Cheval Blanc presentation standards.
  • Ensure continuous clearing and cleaning of the dining room and maintenance of service equipment throughout service.
  • Coordinate and communicate closely with kitchen, stewarding, cellar and provisioning teams to guarantee a seamless service.
  • Promote the hotel’s restaurants and dining events to guests and contribute to upselling when appropriate.
  • Adhere to hygiene, health and safety regulations (HACCP) and internal operational procedures.

Qualifications

  • BEP/CAP/BAC PRO in Hospitality, Catering or equivalent vocational qualification.
  • Knowledge of luxury hotel or starred restaurant operations; prior experience in a similar high‑end environment preferred.
  • HACCP awareness and ability to apply hygiene standards in daily service.
  • Fluent written and spoken English required; a third language (Arabic, Russian, Chinese or Portuguese) is an asset.
  • Proven customer service aptitude, strong interpersonal skills and high representational standards.
  • Good organisational skills, attention to detail, flexibility and availability for varied service hours.
  • Familiarity with hospitality software and reservation platforms (Pack Office, Micros, La Fourchette) is desirable.

Experience
