Role & Responsibilities

  • Assist the Chef de Rang in creating a welcoming atmosphere and ensuring exceptional guest experiences throughout service
  • Prepare and organize the dining area, ensuring cleaning and table setup adhere to Cheval Blanc's procedural standards
  • Maintain strict HACCP hygiene protocols and cleanliness standards in the dining room
  • Manage point-of-sale supplies and provisions to ensure flawless service flow
  • Support food and beverage service under the guidance of the Chef de Rang, maintaining presentation standards consistent with Cheval Blanc specifications
  • Clear tables and clean service equipment during and after service, ensuring constant dining room cleanliness
  • Coordinate and communicate with kitchen, storeroom, wine cellar, and stewarding departments for harmonious service delivery
  • Act as a Cheval Blanc ambassador by contributing to memorable experiences from guest arrival through departure, including seating, coat check, and send-off
  • Promote the hotel's restaurants and special dining events organized by Cheval Blanc

Qualifications

  • BEP, CAP, or BAC PRO in Hospitality/Restaurant Management
  • Minimum 3 years of significant service experience in a comparable luxury establishment or Michelin-starred restaurant
  • Prior internship or employment in a similar fine dining or luxury hospitality setting
  • Fluent English (written and oral)
  • Proficiency with Microsoft Office, Micros POS system, and La Fourchette platform
  • Knowledge of a third language preferred (Arabic, Russian, Mandarin, or Portuguese)
