Cheval Blanc St-Barth seeks Commis de Cuisine in Saint Barthélemy. Entry-level culinary role in luxury Caribbean resort with mentorship and fine dining exposure.

Role & Responsibilities

  • Assist the Chef de Partie in daily kitchen operations and dish preparation, serving as a key contributor to the guest experience
  • Execute foundational culinary tasks including peeling, cutting, washing, and receiving incoming ingredients with precision and care
  • Participate in the preparation and plating of dishes according to established techniques and Chef's specifications, ensuring meticulous presentation and adherence to plating standards
  • Maintain mise en place discipline, organizing and distributing prepared components while upholding stringent plating guidelines
  • Ensure full compliance with HACCP hygiene standards and the Maison's procedures throughout all kitchen activities
  • Contribute to kitchen cleanliness, equipment maintenance, waste sorting, and proper disposal of culinary byproducts

Qualifications

  • BEP, CAP, or BAC PRO qualification in Cuisine (or equivalent culinary training)
  • Demonstrable knowledge of luxury hospitality or Michelin-starred restaurant operations
  • Prior practical experience (internship or staff position) in a comparable high-end culinary establishment
  • Mastery of HACCP food safety standards and rigorous hygiene protocols
  • Solid command of classical and contemporary culinary techniques
