Cheval Blanc Cap Estel seeks Commis de Cuisine in Nice, France for Michelin-starred restaurant. Full-time fixed-term position.
Role & Responsibilities
- Assist Chefs de Partie in all aspects of kitchen operations, executing foundational culinary techniques with precision and discipline
- Perform mise en place, vegetable preparation, and ingredient processing while adhering strictly to the house's technical specifications
- Participate actively in plate plating and dressing, maintaining visual excellence and alignment with house standards
- Maintain rigorous compliance with hygiene protocols and HACCP food safety standards at all times
- Support inventory management and coordinate supply organization across assigned stations
- Collaborate seamlessly with kitchen brigades, responding to directives with calm professionalism in a high-pressure environment
- Demonstrate exemplary culinary practice and mentor junior staff by embodying organization, precision, and discretion
Qualifications
- CAP to Bac+2-level culinary training or equivalent professional credential
- Minimum 3 years of confirmed experience in Michelin-starred or fine-dining restaurant kitchens
- Minimum 2 years as a Commis de Cuisine or equivalent junior kitchen position
- Comprehensive knowledge of fresh product handling and diverse culinary techniques
- Mastery of knife skills, plating methods, and technical recipe execution
- Full competency in food hygiene and HACCP compliance protocols
Skills
Experience
Minimum 3 years of confirmed culinary experience in fine-dining environments, with at least 2 years specifically in a junior Commis de Cuisine role. Demonstrated expertise in Michelin-starred restaurant kitchens strongly preferred.
Education
CAP (Certificat d'Aptitude Professionnelle) in Culinary Arts through Bac+2-level hospitality training, or equivalent professional credential.
