Role & Responsibilities
- Assist Chefs de Partie in all aspects of kitchen operations while maintaining the highest standards of culinary excellence
- Perform foundational food preparations, cutting, and portioning of fresh ingredients using varied culinary techniques
- Execute mise en place and plate finishing with precision and attention to detail, adhering rigorously to house technical specifications
- Uphold strict compliance with hygiene and food safety standards including HACCP protocols
- Support inventory management and efficient handling of stocks and kitchen supplies
- Collaborate seamlessly with the brigade, follow directives, and contribute to the fluidity and efficiency of service
- Demonstrate exemplary organization, discretion, and a commitment to continuous learning and professional development
Qualifications
- Culinary training from CAP to Bac+2 level
- Confirmed experience of 1 to 3 years in Michelin-starred or haute cuisine kitchen environments
- Minimum 2 years in the role of Commis de Cuisine
- Proficiency in handling fresh products and diverse culinary techniques
- Demonstrated mastery of food preparation, cutting, and basic plating methods
- Thorough knowledge of technical recipe sheets and their strict application
- Expert-level knowledge of food hygiene and safety standards (HACCP)
