Cheval Blanc seeks a Commis Chef for Restaurant Louis Vuitton in Saint‑Tropez, France — fixed‑term full‑time role with accommodation or allowance.
Role & Responsibilities
- Assist the demi‑chef de partie and chef de partie with mise en place, production and service, ensuring consistent quality and timing.
- Execute basic preparations — peeling, cutting, portioning — and apply fundamental culinary techniques with rigour.
- Perform simple plating and finishing tasks according to fiche technique and presentation standards.
- Maintain strict compliance with hygiene and food‑safety protocols (H.A.C.C.P.) during all stages of preparation and service.
- Support stock rotation, basic inventory control and timely replenishment of supplies.
- Observe, learn and progressively take on expanded responsibilities under the supervision of senior kitchen staff.
Qualifications
- Vocational culinary qualification (CAP, Bac+2 or equivalent).
- Minimum 2–3 years' professional kitchen experience, including at least 2 years as a commis; experience in Michelin‑starred or high‑end restaurants preferred.
- Proven experience working with fresh, seasonal produce and executing a variety of classical and modern techniques.
- Demonstrable knowledge and application of H.A.C.C.P. and food‑safety procedures.
- Ability to follow recipes and fiches techniques precisely and maintain consistent quality under pressure.
