Cheval Blanc — Saint Barthélemy: Commis Chef (contract) full-time role supporting Chef de Partie in luxury hotel kitchens.

Role & Responsibilities

  • Assist the Chef de Partie with daily kitchen operations, food preparation and execution of service.
  • Perform preliminary product preparation tasks such as peeling, cutting, washing and basic butchery under supervision.
  • Receive and check deliveries, contribute to stock control and proper storage of goods.
  • Participate in the preparation and assembly of dishes, following recipes and chef instructions precisely.
  • Prepare mise en place and ensure plated dishes meet presentation and dressage standards.
  • Maintain cleanliness of work areas and equipment in accordance with the House procedures and H.A.C.C.P. rules, including sorting and disposal of waste.

Qualifications

  • CAP / BEP or Bac Pro in Culinary Arts or equivalent vocational culinary training.
  • Familiarity with luxury hotel or Michelin-level restaurant environments preferred.
  • Demonstrable understanding and application of H.A.C.C.P. hygiene standards.
  • First practical experience (internship or initial position) in a professional kitchen is desirable.
