Role & Responsibilities

  • Assist the Chef de Partie in daily kitchen operations, including mise en place, food preparation and service support for the Japanese restaurant (Hakuba).
  • Perform preliminary product preparation tasks: peeling, cutting, portioning, washing and basic butchery/vegetable work while respecting portion control and yield targets.
  • Receive and check deliveries, ensure correct labeling, rotation and storage in accordance with stock procedures.
  • Contribute to the elaboration and finishing of dishes following established recipes and plating/dressage standards.
  • Maintain rigorous hygiene and safety standards in line with HACCP procedures; ensure cleaning and upkeep of workstations and equipment.
  • Support the brigade during service periods, manage timely distribution of dishes and assist with waste sorting and disposal.

Qualifications

  • Vocational culinary diploma (BEP, CAP or Bac Pro Cuisine) or equivalent professional qualification.
  • Minimum 3 years' relevant experience in a luxury hotel kitchen or Michelin‑starred restaurant (including internships).
  • Demonstrated knowledge and practical application of HACCP hygiene standards.
  • Strong command of fundamental cooking techniques and mise en place.
  • Reliable, adaptable and available for service hours typical of fine‑dining operations; excellent team spirit and attention to detail.

Experience
