Cheval Blanc seeks a Chef Sommelier in Porto Cervo — lead the sommellerie, curate the cellar and elevate guest experience at the maison.
Role & Responsibilities
- Define and curate the cellar strategy, source and select exemplary wines, spirits and beverages aligned with luxury clientele and market trends.
- Create and maintain an exceptional wine list and beverage menu that reinforces the maison’s culinary positioning.
- Lead, train and develop the sommellerie team, setting service standards and performance expectations.
- Drive revenue through innovative sales strategies, wine pairings and curated eno‑gastronomic events.
- Provide high‑level guest consultations and personally manage interactions with the most demanding clients.
- Oversee all cellar operations including inventory, purchasing, storage standards, cost control and stock optimisation.
- Ensure strict compliance with SOPs, HACCP regulations and LQA standards across wine handling and service.
- Maintain seamless communication and coordination with the kitchen, F&B teams and other departments.
- Produce detailed reports on cellar performance; analyse sales and consumption trends to inform purchasing and pricing decisions.
- Act as an ambassador for Cheval Blanc by cultivating relationships with producers, suppliers and press; represent the maison at tastings and industry events.
Qualifications
- Minimum 10 years’ experience in luxury sommellerie, with 3–5 years in a leadership role at a five‑star hotel or Michelin‑starred restaurant.
- Recognised wine qualifications preferred (e.g., WSET Diploma; Advanced Sommelier — Court of Master Sommeliers).
- Proven managerial competence in team leadership, budgeting, inventory management and revenue optimisation.
- Exceptional guest‑facing skills with the ability to advise and influence an international, high‑net‑worth clientele.
- Deep, up‑to‑date knowledge of international and Italian wine regions, spirits and contemporary trends.
- Fluency in Italian and English; proficiency in French is a strong advantage.
- Willingness to work flexible and demanding hours in a luxury hotel environment.
