Role & Responsibilities
- Lead a dedicated pastry brigade in the creation of seasonal desserts that showcase both technical mastery and artistic presentation
- Manage all aspects of pastry production including mise en place, preparation, cooking, and plating with exacting precision
- Ensure strict adherence to technical specifications and HACCP protocols across all pastry operations
- Supervise and mentor commis pâtissiers, providing guidance on technique, standards, and professional development
- Manage inventory and quality control of pastry ingredients and raw materials for the section
- Coordinate closely with the Central Pastry Kitchen leadership to align production with hotel standards and culinary vision
- Maintain consistent quality and elegance across all service periods while adapting to seasonal product availability
Qualifications
- CAP in culinary arts or equivalent to Bac+2
- Minimum 3 years of confirmed pastry experience in Michelin-starred restaurants
- Minimum 2 years in a Chef de Pâtisserie or equivalent leadership role
- Advanced proficiency in pastry techniques including mise en place, baking, cooking, and plating
- Demonstrated ability to manage a pastry station autonomously and supervise team production
- Knowledge of HACCP standards and food safety protocols
- Fluent French communication (role is based in a French-speaking property)
Skills
Experience
Minimum 3 years of confirmed pastry experience in Michelin-starred or fine dining establishments, with at least 2 years in a Chef de Pâtisserie position or equivalent supervisory role. Demonstrated mastery of contemporary pastry techniques and seasonal product utilization.
Education
CAP (Certificat d'Aptitude Professionnelle) in culinary arts, or equivalent qualification up to Bac+2 level in pastry or gastronomy.
Workplace
The successful candidate will be located in Courchevel, Auvergne-Rhône-Alpes, France.
