Cheval Blanc St-Barth seeks Chef de Partie for Langosteria Italian restaurant. Lead kitchen station with HACCP mastery and culinary excellence in luxury Caribbean setting.

Role & Responsibilities

  • Lead preparation, organization, and execution of all dishes from your assigned kitchen station
  • Ensure consistent adherence to cooking standards, portion accuracy, and precision in plating throughout service
  • Supervise and mentor commis on your station, delegating tasks and monitoring execution quality
  • Maintain station mise en place, workspace hygiene, and equipment readiness before, during, and after service
  • Apply technical recipe sheets and HACCP food safety protocols with precision and consistency
  • Manage ingredient handling, storage rotation, and inventory control according to established procedures
  • Collaborate with the broader brigade to maintain service flow and collective performance standards

Qualifications

  • BEP, CAP, or BAC PRO in culinary arts
