Role & Responsibilities

  • Manage and produce all dishes for an assigned section (hot, cold or pâtisserie) ensuring consistency, timing and presentation during service.
  • Execute mise en place, production and final plating to the highest standards of taste and visual presentation.
  • Apply and enforce HACCP and internal hygiene procedures, maintaining a spotless, safe and compliant workstation.
  • Train, mentor and supervise junior cooks and commis, transmitting techniques and Maison standards with patience and rigor.
  • Control portioning, waste and stock for the section; collaborate with sous-chef and head chef to optimise resources and service flow.
  • Coordinate closely with the brigade and front-of-house to ensure flawless timing and a seamless guest experience.

Qualifications

  • BEP / CAP / Bac Pro Cuisine or equivalent professional culinary diploma.
  • Proven experience in luxury hotel or high-end restaurant kitchens; multiple seasons in similar establishments strongly preferred.
  • Solid command of HACCP procedures and kitchen hygiene standards.
  • Thorough mastery of classical culinary techniques (hot and cold preparations and pâtisserie within the assigned section).
  • Demonstrated leadership, precision, flexibility and strong team spirit.
