The Pitrizza (Cheval Blanc), Porto Cervo: Chef de Partie position in luxury hospitality, leading kitchen operations with full-time contract.

Role & Responsibilities

  • Ensure culinary excellence and product quality by monitoring raw materials, finished dishes, and adherence to technical specifications and culinary standards
  • Serve as a brand ambassador for The Pitrizza, upholding the maison's values and image through exceptional guest relations, supplier partnerships, and inter-departmental collaboration
  • Manage costs and inventory effectively by monitoring consumption, verifying deliveries, coordinating orders with the retail point of sale, and optimizing merchandise costs
  • Train, brief, and supervise junior kitchen staff, fostering a motivated and cohesive team environment
  • Ensure strict compliance with food hygiene and safety regulations (HACCP) throughout the designated kitchen section
  • Maintain effective communication across all hierarchical levels, collaborating closely with the Executive Chef, Sous Chef, and Chief Sommelier whilst participating in briefings and operational meetings
  • Oversee equipment maintenance and kitchen cleanliness standards, conducting rigorous inspections and ensuring proper sanitation protocols, particularly at service close

Qualifications

  • Minimum 3 years of significant experience as Chef de Partie or equivalent role in luxury hotel or fine dining restaurant kitchens
  • International culinary background strongly preferred
  • Deep knowledge of classical and contemporary culinary techniques and premium ingredients
  • Rigorous understanding and demonstrated application of HACCP protocols and food safety regulations
  • Exceptional organizational, planning, and problem-solving capabilities
  • Strong communication and interpersonal skills, including the ability to perform effectively under pressure
