Cheval Blanc Paris is seeking a Chef de Partie for its Italian restaurant, Langosteria. The role leads an assigned kitchen section, oversees preparation and service, maintains HACCP standards, and trains junior kitchen staff; this is a full-time permanent position.
Role & Responsibilities
- Oversees and performs preliminary food preparation, including peeling, cutting and washing ingredients, and checks deliveries.
- Participates in preparing and developing dishes, ensuring compliance with technical recipes and quality standards.
- Trains and shares expertise with commis chefs and junior chefs de partie.
- Manages mise en place and service for the assigned section, ensuring careful presentation, adherence to plating instructions and timely dispatch.
- Coordinates with other kitchen sections and the Chefs de Cuisine.
- Maintains the cleanliness and upkeep of the workstation and equipment in accordance with HACCP standards and house procedures, and supervises waste sorting and disposal.
- Leads the assigned section and team, contributing to an exceptional guest experience.
Qualifications
- BEP, CAP or BAC PRO qualification in catering or culinary arts.
- Knowledge of luxury hospitality or Michelin-starred restaurants.
- A first internship or role in a comparable establishment.
- At least 3 years of significant service experience in an establishment of comparable standing.
- Sales and communication aptitude.
- Fluent English, written and spoken.
- A third language is an advantage: Arabic, Russian, Chinese or Portuguese.
- Excellent interpersonal skills and strong representational presence.
- Excellent sense of welcome and customer service, with courtesy and tact.
