Role & Responsibilities

  • Lead and supervise a dedicated kitchen station, ensuring consistent adherence to technical specifications and quality standards
  • Prepare and execute all components of assigned section, from mise en place to plating and service coordination
  • Train and mentor commis and junior chefs de partie, transmitting culinary expertise and operational best practices
  • Oversee receipt and preparation of all products assigned to the station, including preliminary mise en place tasks (peeling, cutting, washing)
  • Ensure proper presentation, plating protocols, and timely service of all dishes from the station
  • Coordinate seamlessly with other kitchen sections and Head Chef to maintain service flow and consistency
  • Maintain meticulous standards of hygiene, food safety, and equipment maintenance in compliance with HACCP regulations
  • Manage waste segregation and disposal procedures according to Maison standards

Qualifications

  • BEP, CAP, or BAC PRO in Culinary Arts
  • Minimum 2 years' experience as Chef de Partie in a luxury hotel or Michelin-starred restaurant
  • Demonstrable knowledge of luxury hospitality or fine dining operations
  • Full mastery of HACCP food safety protocols and procedures
  • Understanding of culinary ratios, margins, and cost control
  • Strong operational management and leadership capabilities
