Role & Responsibilities

  • Own and operate an assigned kitchen station: prepare, cook and finish dishes in accordance with recipes and presentation standards.
  • Supervise mise en place, product handling and incoming goods control for the station; ensure correct portioning and stock rotation.
  • Coordinate timing and delivery of dishes with other stations and the executive/chefs de cuisine to guarantee service flow and punctuality.
  • Train, mentor and supervise commis and demi-chefs of the station; transmit technical savoir-faire and enforce brigade discipline.
  • Ensure compliance with HACCP and house hygiene procedures; maintain cleanliness, organisation and upkeep of equipment and workspace.
  • Contribute to cost control by respecting food cost ratios, minimizing waste and following portioning and yield directives.

Qualifications

  • Professional culinary diploma: BEP / CAP / Bac Pro Cuisine or equivalent.
  • Minimum 3 years' experience as Chef de Partie in a luxury hotel or Michelin-starred restaurant.
  • Demonstrable mastery of HACCP principles and kitchen hygiene standards.
  • Proven ability to train and supervise junior kitchen staff and to manage a station autonomously.
  • Strong understanding of menu costing, portion control and food-cost ratio management.

Experience

BEP / CAP / Bac Pro in Cuisine or equivalent professional culinary qualification.
