Role & Responsibilities

  • Supervise and execute preliminary food preparation tasks including peeling, cutting, and washing; control merchandise reception and quality standards
  • Participate actively in dish preparation and elaboration whilst adhering strictly to technical specifications and quality standards established by the kitchen brigade
  • Mentor and train commis chefs and demi-chefs de partie in culinary techniques and house standards
  • Assume responsibility for plating and distribution of dishes from assigned station, ensuring meticulous presentation and timely execution of service
  • Coordinate seamlessly with other kitchen stations and head chefs to maintain service rhythm and consistency
  • Maintain rigorous hygiene standards and HACCP compliance protocols; supervise waste sorting and disposal procedures
  • Oversee cleanliness and maintenance of workstation and equipment throughout service

Qualifications

  • BEP/CAP Cuisine or BAC PRO Cuisine qualification
  • Demonstrated mastery of HACCP hygiene protocols
  • Knowledge of luxury hospitality or Michelin-starred restaurant operations
  • Minimum 2 years' experience as Chef de Partie in luxury hotel or starred restaurant
  • Understanding of cost ratios and margin management
