Role & Responsibilities

  • Direct preparation of breakfast service according to technical specifications, ensuring consistent quality and refined presentation
  • Participate in seasonal menu development and dish creation that honors the maison's culinary identity while showcasing fresh local produce
  • Execute mise en place, cooking, and plating with precision, regularity, and meticulous attention to detail
  • Supervise and mentor the commis on the station, ensuring adherence to protocols and maximizing operational efficiency
  • Manage station inventory, monitor food costs, and maintain rigorous portion control
  • Oversee strict compliance with HACCP food safety standards and all relevant health regulations
  • Lead by example through exemplary organization, discipline, and uncompromising culinary standards

Qualifications

  • CAP in culinary arts or equivalent professional qualification through Bac+2 level
  • Minimum 3 years of proven experience as a Chef de Partie in fine dining or luxury hospitality
  • Demonstrated mastery of classical mise en place, cooking, and plating techniques
