Cheval Blanc Paris seeks an Assistant Director of Food & Beverage to manage Michelin-starred restaurants and culinary operations in this luxury LVMH property.

Role & Responsibilities

  • Collaborate with the Food & Beverage Director to ensure profitability and revenue growth across all food and beverage outlets
  • Define and implement dining concepts and service standards aligned with the property's luxury positioning and brand identity
  • Oversee coordination between front-of-house dining staff and kitchen teams to ensure seamless service delivery
  • Organize and execute special event operations and banquet programming in coordination with culinary leadership
  • Monitor and maintain optimal guest experiences across all dining venues according to established service protocols
  • Ensure consistent quality of service delivery and venue presentation standards
  • Manage guest relations, including direct engagement with VIP and repeat clientele
  • Develop and implement commercial initiatives to drive revenue indicators and promote integrated hotel services
  • Handle guest complaints and concerns according to hotel procedures and escalation protocols
  • Recruit, onboard, train, and schedule food and beverage department personnel while fostering team engagement and motivation
  • Create and maintain a positive departmental culture and work environment
  • Ensure compliance with all applicable labor regulations and employment standards
  • Participate in budget development and financial management of food and beverage operations
  • Monitor operational ratios and profitability metrics; recommend improvements
  • Collaborate with procurement and vendor management to optimize supplier relationships and negotiate pricing
  • Oversee inventory management, stock control, and supply chain procedures
  • Ensure strict adherence to HACCP food safety standards and hygiene regulations across all venues
  • Participate in evening and weekend management duties as required
  • Represent senior management in the absence of the Food & Beverage Director in dealings with guests, vendors, and local authorities
  • Ensure consistent communication of critical information and service directives to all team members

Qualifications

  • Minimum 5 years of experience in a luxury hospitality or Michelin-starred restaurant setting
  • Advanced formal training in hotel management and gastronomy
  • Demonstrated expertise in HACCP food safety standards and culinary operations
  • Proven management capabilities including recruitment, training, team development, and performance evaluation
  • Strong financial acumen encompassing budgeting, revenue analysis, ratio management, and inventory control
  • Proficiency with Microsoft Office Suite, Micros point-of-sale systems, and Opera property management software
  • Fluent English language skills (written and oral)
  • Knowledge of a third language is valued
