Belmond’s Copacabana Palace, a Belmond Hotel, is seeking a Sous Chef for Pérgula to support the Chef, lead the kitchen team, oversee food production and safety, manage supplies and schedules, and contribute to menu planning. The role includes collaboration on kitchen operations and reports and requires availability for a 5-on, 2-off schedule.
Role & Responsibilities
- Support the Chef de Cuisine with the restaurant’s operational activities.
- Lead, train and inspire the kitchen team, fostering a collaborative environment.
- Ensure compliance with quality, hygiene and food safety standards.
- Prepare days-off, shift and vacation schedules to ensure smooth operations.
- Supervise food production, ensuring quality and efficiency.
- Manage stock and product requisitions, using resources responsibly.
- Monitor food safety forms and records, keeping the kitchen organised and compliant.
- Plan and test new dishes and menus in line with technical specifications and the restaurant’s identity.
- Collaborate with the kitchen administrative team on operational routines and reports.
Qualifications
- Completed higher education in Gastronomy.
- At least 3 years of experience in the role at fine-dining restaurants.
- Hotel industry experience is an advantage.
- Knowledge of kitchen good practices.
- Knowledge of Brazilian health surveillance requirements and legislation.
- Knowledge of food hygiene and handling techniques.
- Knowledge of Nutrition is an advantage.
- Availability to work a 5-on, 2-off schedule.

Experience
At least 3 years in the role at fine-dining restaurants; hotel industry experience is an advantage.
Education
Completed higher education in Gastronomy.
