Splendido Mare, A Belmond Hotel, seeks a Sommelier for DaV Mare, its restaurant in Portofino, working in partnership with the Cerea family. The role supports outlet operations, guest service and the head sommelier during service, and contributes to economic targets; it is a seasonal position under the C.C.N.L. Settore Turismo, Level 4, from October 2026 to January 2027, with the aim of continued collaboration over subsequent seasons.
Role & Responsibilities
- Oversee Food & Beverage outlet operations and monitor the guest experience, from restaurant layout before arrival through service.
- Enhance service standards, anticipate guests’ needs, build and maintain positive guest relationships, and handle requests and enquiries.
- Assist the head sommelier during service.
- Contribute to achieving economic targets.
Qualifications
- Previous professional experience in the same role within a luxury environment.
- Passion for service and ambition to grow professionally.
- Effective communication, emotional intelligence and adaptability.
- Ability and willingness to work collaboratively as a team player.
- Ability to deliver genuine, consistent high service standards by anticipating and exceeding the expectations of guests and colleagues.
- Ability to treat others with respect and inclusiveness, regardless of position, level or background.
- Fluency in English and Italian.
- HACCP certification.
