The Restaurant Manager leads onboard dining operations on the Eastern & Oriental Express, overseeing restaurant service, team performance, food and beverage coordination, inventory, and guest experience throughout each journey. The role requires a hospitality-related diploma or degree and at least five years of hands-on experience in fine dining, luxury hotels, cruise ships, or premium hospitality environments.
Role & Responsibilities
- Lead and manage the onboard restaurant team to deliver seamless service and memorable guest experiences.
- Ensure dining operations meet Belmond’s luxury service standards and international hospitality best practices.
- Coordinate with culinary staff on food preparation, presentation, and menu execution.
- Manage inventory, ordering, and storage of food and beverage supplies while maintaining optimal stock levels.
- Implement service improvement programs and projects to enhance efficiency, guest satisfaction, and dining quality.
- Oversee table settings, dining room ambiance, and guest interactions in line with luxury brand expectations.
- Align restaurant operations with the train’s schedules and guest itineraries.
- Ensure clear communication and workflow between restaurant staff, kitchen teams, and onboard management.
- Compile service performance metrics, guest feedback, and operational reports, and recommend improvements based on findings.
Qualifications
- Diploma or degree in Hospitality Management, Culinary Arts, or a related field.
- Proven expertise in restaurant operations, including staff leadership, guest service, and food and beverage coordination.
- Strong knowledge of international dining standards, wine service, and luxury hospitality protocols.
- Ability to oversee inventory management, ordering, and cost control while maintaining premium quality standards.
- Excellent communication and interpersonal skills, with the ability to lead a multicultural team and interact with high-profile guests.
- Familiarity with health, safety, and hygiene regulations in hospitality operations; food safety certification is an advantage.
- Ability to collaborate with culinary teams, service staff, and management to ensure seamless guest experiences.
- Commitment to excellence, attention to detail, and maintaining the highest service standards in a luxury rail environment.
