As Pastry Chef at Monasterio, a Belmond Hotel, Cusco, the role prepares desserts and pastries to recipes, technical specifications and the restaurant menu, ensuring quality, presentation, flavour and consistency. Responsibilities include mise en place, food preparation and storage, hygiene, inventory reporting and supporting the pastry team. The role requires a technical qualification in pastry or bakery and at least two years of kitchen and pastry experience.
Role & Responsibilities
- Prepare mise en place for desserts, including cuts, sauces, ingredients and special preparations.
- Prepare desserts, cookies, sweet sauces, ice cream and other pastry products offered by the hotel.
- Review recipes and instructions before each preparation and follow them strictly.
- Maintain the hotel’s quality and hygiene standards while preparing and handling products.
- Pack, cover and store sauces and preparations appropriately in line with established requirements.
- Promptly report missing ingredients or supplies to the area supervisor.
- Support other bakers and pastry chefs with tasks needed to ensure operational continuity.
- Clean and disinfect the work area before, during and after each shift.
Qualifications
- Technical qualification in Pastry, Bakery and/or a related field.
- Knowledge of high-end pastry and good food-handling practices.
- Ability to contribute innovation and creativity, work as part of a team and perform under pressure.
Skills
Experience
At least 2 years of experience in kitchen and pastry work.
Education
Technical qualification in Pastry, Bakery and/or a related field.
