The Kitchen Steward at Las Casitas, a Belmond Hotel, Colca Canyon, cleans and maintains kitchen areas, equipment and serviceware while supporting hygiene, safety and operational standards. Responsibilities include stewarding-store organisation, waste and used-oil disposal, daily records, incident reporting and participation in company training.

Role & Responsibilities

• Clean, disinfect and organise the assigned area in accordance with hygiene standards.
• Wash kitchen utensils, equipment and worktables to ensure they are available and ready for use.
• Wash, polish, store and redistribute restaurant, event and room-service crockery, glassware and cutlery.
• Keep the stewarding storeroom organised, receiving and arranging area supplies appropriately.
• Record daily occurrences and complete the relevant cleaning forms.
• Sort waste for recycling and dispose of rubbish in the designated containers according to waste type.
• Dispose of used cooking oil in the designated area.
• Report errors, stock write-offs and incidents; identify and store products in accordance with established procedures.
• Carry out and record cleaning of equipment and surfaces, including extractor hoods, walls, microwaves and dishwashing machines.
• Attend company training to strengthen compliance with departmental procedures.

Qualifications

• Ability to work effectively as part of a team with kitchen and service colleagues.
• Problem-solving ability, including reporting errors or stock write-offs and handling unforeseen situations calmly.
• Ability to use kitchen utensils, machinery and equipment correctly and safely.
