The Kitchen Steward at Copacabana Palace, a Belmond Hotel, cleans and sanitizes kitchen and restaurant areas, manages utensils and waste, reports equipment issues and supports routine maintenance while upholding Belmond and hotel hygiene, quality and safety standards. The role is full-time and follows a 5-on/2-off schedule.

Role & Responsibilities

• Clean and organize utensils, including dishes, cutlery, crystalware, porcelain, serving dishes and plastic containers, in accordance with the Steward Manual.
• Sanitize machines, equipment, floors, walls and other areas of kitchens and restaurants.
• Use chemical products correctly according to recommended dilution instructions.
• Complete and sign cleaning checklists and the monthly sanitation plan.
• Sort waste, separating recyclable and organic materials.
• Remove recyclables and glass bottles and take them to the recycling area.
• Organize waste in the designated bays.
• Identify and report faults in machines and equipment, requesting maintenance when necessary.
• Report temperature changes in the waste room and problems with the compactor.
• Report objects found in the waste to Security Management.
• Assist the maintenance team with routine activities.
• Keep the department clean, organized and compliant with hygiene and safety standards.
• Control materials and waste to ensure hygiene, quality and compliance with Belmond and Copacabana Palace standards, while promoting reduction, reuse and recycling.

Qualifications

• Completed secondary education.
• Knowledge of food safety is an advantage.

Skills

Experience

At least 6 months in the role or a similar position at a cleaning-sector company is preferred.
