The Falconer at Grand Hotel Timeo, a Belmond Hotel, manages trained birds of prey to deter nuisance birds from restaurant terraces, monitors outdoor dining areas, engages guests in falconry, and ensures the falcon’s welfare and safe handling. This seasonal role coordinates with food and beverage and kitchen teams and offers an annual salary of €35,000–€40,000 under the C.C.N.L. Settore Turismo - Federalberghi.

Role & Responsibilities

  • Professionally manage and deploy trained birds of prey during terrace service hours (breakfast, lunch, aperitif, and dinner) to prevent pigeons and other birds from entering tables and dining areas.
  • Patrol and visually monitor the outdoor areas of the bar and restaurant, anticipating and addressing wildlife-related issues using ethical, safe, and ecological methods.
  • Explain the art of falconry and the management of the bird of prey to guests with expertise, elegance, and discretion when requested.
  • Ensure the falcon’s daily care, health, training, and safe handling, in full compliance with applicable animal welfare regulations and possession permits.
  • Coordinate regularly with the restaurant and kitchen managers to align operational presence with service flows and guest needs.

Qualifications

  • Demonstrated experience managing, training, and flying birds of prey in complex tourism, hotel, or public settings.
  • Hold all legally and medically required licenses, certificates, and permits for keeping and using birds of prey.
  • Strong interpersonal skills, charm, elegance, and a presence suited to five-star luxury hospitality.
  • Discretion, professionalism, and the ability to move naturally through dining rooms and terraces serving international guests.
  • Schedule flexibility aligned with the operating shifts of high-end food and beverage service.
