The Chef de Partie at La Samanna, A Belmond Hotel, supports culinary operations and delivers exceptional dining experiences, preparing and presenting dishes to the hotel’s quality, hygiene and service standards. The role includes coordinating kitchen section tasks, managing supplies and minimising waste; the position is full-time.

Role & Responsibilities

• Set up ingredients and work equipment.
• Prepare dishes and oversee their finishing and visual presentation, ensuring appropriate temperature, consistency and appearance.
• Maintain thorough knowledge of the menu and dish compositions.
• Allocate tasks to Commis Chefs and Demi Chefs de Partie, and ensure the established schedule is followed.
• Determine required supplies.
• Minimise waste and optimise the use of raw ingredients.
• Keep the work area, including cold rooms, freezers and other equipment, clean and hygienic in accordance with hotel standards.
• Take initiative and share ideas to develop the department.
• Collaborate effectively with other kitchen sections.

Qualifications

• Several years of experience as a Chef de Partie in a restaurant and/or hotel.
• Basic culinary knowledge.
• Good knowledge of hygiene and safety regulations.
• Flexibility to work some additional hours, Sundays and/or evenings when necessary.
