The Baker at Sanctuary Lodge, a Belmond Hotel, Machu Picchu prepares bread and bakery items for hotel breakfasts and special orders, supports the pastry team, and maintains product quality, inventory and kitchen hygiene. The role is based in Aguas Calientes, Peru.

Role & Responsibilities

  • Prepare the required mise en place, including cuts, sauces and special ingredients, ensuring correct preparation, storage and labeling.
  • Review and accurately follow recipes and instructions before and during preparation, meeting quality and presentation standards.
  • Prepare and bake bread for hotel breakfasts and fulfil special bakery orders efficiently and precisely.
  • Maintain an up-to-date inventory of prepared products, particularly refrigerated items, and submit a weekly report to the Chef.
  • Support the baker and pastry team with operational tasks during the shift, promoting efficient teamwork.
  • Set up and maintain the dessert buffet, replenishing it promptly and ensuring products remain fresh and well presented.
  • Clean and disinfect the work area, equipment, and refrigeration and freezer rooms before, during and after each shift in accordance with hygiene protocols.
  • Pack and store preparations such as sauces and mise en place correctly to preserve them under optimal conditions.
  • Report shortages of ingredients or supplies to the area supervisor and support stock control and timely replenishment.
  • Comply with current regulations and standards, including the occupational health and safety management system, local regulations, and the property’s LQA, SQF and HACCP standards.

Qualifications

  • Technical qualification in Gastronomy, baking, or a related field.
  • At least 2 years of work experience producing bakery products, with comprehensive knowledge of techniques and processes.
  • Basic spoken and written English sufficient to communicate effectively with the kitchen team and understand technical instructions.
  • Ability to maintain high standards of hygiene and order in the work area and rigorously apply cleaning and disinfection procedures.
  • Ability to work quickly and efficiently, with attention to detail to ensure product quality and presentation.
