The Assistant Food and Beverage Outlet Manager supports food and beverage outlet operations at Mount Nelson in Cape Town, overseeing service standards, team coordination, cost controls, rosters, training and guest feedback. The role contributes to exceptional dining experiences in line with Belmond values and Mount Nelson Hotel standards.
Role & Responsibilities
- Ensure the highest standards of hospitality and guest comfort throughout all phases of food and beverage service, in accordance with Belmond values and Mount Nelson Hotel standards.
- Assist with managing food and beverage outlets and ensure their smooth operation.
- Supervise, coordinate and direct prompt, cordial and efficient food and beverage service, maintaining standards throughout service.
- Implement systems and procedures that improve cost efficiency and guest satisfaction.
- Assist with reporting deadlines, payroll and staff rosters.
- Conduct daily team briefings.
- Monitor and control operating equipment, standards and inventories.
- Assist with monitoring and controlling food and beverage costs and variances.
- Work in all food and beverage outlets regularly or as required.
- Coordinate communication between front-of-house and back-of-house staff.
- Inspect food and beverage preparation and presentation regularly to maintain required standards.
- Manage, control and update the On-Track system daily.
- Report maintenance and repair issues to the relevant parties and ensure appropriate corrective action is taken when required.
- Keep all storage areas neat and clean.
- Participate in monthly stocktakes as required.
- Assist with staff rostering to ensure adequate coverage according to business levels.
- Manage processes to ensure beverage items do not reach their expiry dates.
- Assist with implementing formal training plans and conduct regular on-the-job training for employees.
- Monitor guest complaints, compliments and suggestions to ensure prompt, efficient and accurate service.
Qualifications
- 3–5 years of food and beverage supervisory management experience in a luxury hotel environment.
- Good communication and interpersonal skills.
- Knowledge of silverware is advantageous.
- Basic knowledge of food costs, employee scheduling and payroll is advantageous.
- Working knowledge of general restaurant operations.
- Familiarity with point-of-sale computers and software.
